Avocado Zucchini dip

less than 10 minutes  Serves 4


For 1 small jar

1 handful of mint

1 small zucchini

1 small avocado

4 tbs extra virgin olive oil

2 tbs of water

Salt and pepper to taste

½ lemon juice

½ tsp lemon zest


Peel the avocado and take the flesh out. Rinse well the mint and zucchini. Peel half of the zucchini, take the seeds out and chop it before putting it in the blender. Then add the mint, avocado, the lemon juice (you can add some lemon zest if you like it with even more citrus flavor), the olive oil, salt and the water. Blend it with a high-speed blender. You might have to do it several times in order to get the right texture.
