Homemade Granola

Ingredients

1/2 cup pecans

1/2 cup nuts

1/2 cup almonds

2 cups oats

1/2 cup flaxseeds

1/2 cup pumpkin seeds

1/2 cup of sunflower seeds

3 tablespoons coconut oil

2 tablespoons honey or maple syrup

1 teaspoon cinnamon

1/3 cup raisins

1/4 coconut flakes

2 tablespoons goji berries (optional)

 

Method

Preheat the oven to 180c.

Place the pecans, nuts and almonds in a food processor and pulse for about 30 seconds so that they are partially crushed. Then add them to a large mixing bowl with all other dry ingredients from oats to sunflower. Next, melt the coconut oil with honey or maple syrup and cinnamon on the stove. Once it has dissolved  add to the dry ingredients and mix well. Put the mixture in the oven for about 30 minutes until crunchy. During this time you need to mix it every 10 minutes or so to ensure that every bit of the granola is nicely toasted and it does not burn. Once the granola is ready remove it from the oven and allow it to cool.

Then add raisins, goji berries, coconut flakes.

Store the granola in an airtight container to keep it fresh and crunchy for a few weeks.
