Kale Salad

4 handful of kale

1 avocado, cubed

1 bunch of fresh coriander

1/2 cup pomegranate seeds

1/4 cup of roast walnuts


for the dressing

2 tablespoons olive oil extra virgin

1 tablespoon apple cider vinegar

1 fresh lemon juice

sea salt and pepper to tasty


Wash, stems removed, and cut into small ribbons the kale.  Whisk together the dressing ingredients and toss with the kale, then add the avocado, pomegranate, coriander and walnuts (Roast for 5 to 10 minutes). Make sure all of kale gets some dressing on it, this helps to remove some of the bitterness of the kale.
